If you are looking for a quick and easy weeknight dinner try out this veggie stir fry. With just a few simple ingredients and 10 minutes cooking you will have a wonderful, healthy meal. You will need:
1 Bag Asian frozen vegetables
Stir Fry Sauce
Tofu, Shrimp, or Chicken- optional
If you think you need to add fresh veggies to your meal in order for it to be healthy, think again. Frozen vegetables are just as healthy as fresh, and most importantly, they won’t rot away in your fridge after a week. If you are lazy like me, you can buy pre-cooked brown rice and this whole meal will come together in less than fifteen minutes. That’s quicker than it takes to go through the fast food line 😉 If you want a more economical approach, just buy bagged brown rice and cook yourself.
The key to a good stir fry is making sure the pan is super hot when you start cooking. You want to hear that sizzle when you start cooking. To make this meal, heat a tablespoon of oil over high heat. Once hot, drop the protein in and cook for 3-5 minutes, until thoroughly cooked. Remove protein from pan and add in frozen vegetables. Stir fry for a few minutes until tender. Mix in stir fry sauce and serve over brown rice.
