Make it yourself Frozen Breakfast Burritos

Mornings are a very busy time for me. I’m not a morning person at all and tend to skip breakfast if I’m in a hurry or make a quick smoothie or microwave oatmeal.  When my boys were in middle and high school, I made these Breakfast Burritos after buying some frozen varieties that they requested. Homemade burritos are healthier, as you control the amount of salt and other additives. My daughter even makes these herself now if she wants a quick meal, even for supper!
This is the recipe for one burrito. When I make them ahead and freeze them, I usually make about 8 or so, so but the joy of this recipe is that it is so adaptable. You can add anything you want and even make different ones to freeze at the same time by making some sausage, some bacon, and some vegetable.

Do it yourself breakfast burrito you can freeze for easy week day breakfasts for kids and adults

Ingredients
  • 1 tortilla
  • 1 oz or 1 frozen patty of sausage, cooked and drained
  • (pork sausage is high in unhealthy fat so substituting deer, buffalo, turkey or other lean meat sausage is healthier)
  • Other options instead of sausage:
  • bacon 1 slice
  • vegetables such as tomatoes, spinach, onions, peppers (total about ½ cup)
  • 1 egg, scrambled
  • 1 Tablespoon cheddar cheese
Instructions
  1. Cook meat (and vegetables if desired), scramble egg.
  2. Add all to the tortilla, wrap into a burrito, and secure with a toothpick.
  3. If freezing, wrap in freezer or wax paper and all into a freezer ziplock bag.
  4. If frozen, microwave about 1 minute or until cooked through.
  5. Note: recipe makes one so feel free to double or triple recipe to store in freezer
