Simple sweet potato and kale hash perfect served with a poached egg or as a side dish for dinner.

Serves: 1 to 2 servings
  • 1 teaspoon extra virgin olive oil
  • 1 small sweet potato, diced
  • 2 kale leaves, broken from stem and roughly chopped
  • garlic salt to taste
  1. Heat olive oil in skillet over medium heat. Add the diced sweet potatoes, add the garlic salt and cook, stirring frequently so the sides don't burn, for about 4 minutes.
  2. Add the kale, saute for another 3 to 4 minutes or until the sweet potatoes are fork tender. Serve!
