I started making this dressing when I lived in Seattle and honestly don’t remember where I got it from. I do wish I could give credit to where I found it but I have adjusted it a bit over the years and it’s still my favorite. This dressing gives that sweet tangy taste of classic honey mustard but add in the bold flavor of balsamic. Just. delicious. Every time I serve it I get compliments from all ages, even a 7 year old said he loved a salad I made for Thanksgiving…I believe the secret was in this dressing.
I use it on mixed greens, whole grain and lentil salads. It’s a really simple go to recipe that pairs well with many different dishes. I find if I don’t like the flavor of dressings in salad recipes I tend to go back to this one. The best part? It takes all of 5 minutes to make. Perfect!
Store bought salad dressings often have a good amount of preservatives or don’t use the healthiest oils. Having a few simple dressings you can make on your own helps you to use less processed foods and get the health benefits from using extra virgin olive oil.
Try it on a mixed green salad with tomatoes, avocados, pears and toasted walnuts. Beautiful combination.
Don’t trust me though…give it a try and let me know what you think.
