Fresh Tomato Sauce
Yield: 2 cups sauce
Prep Time: 3 minutes
Cook Time: 45 minutes
Ingredients:
4 medium tomatoes, quartered (approx. 1 lb.) or 1 28 oz. can Italian style whole tomatoes
½ small onion
handful of fresh herbs – basil, oregano, and parsley (slightly less oregano than basil)
¼ tsp. sugar
½ tsp. salt
pepper
2 tbsp. Extra Virgin Olive Oil
Steps:
- In a food processor, mix 3 tomatoes, onion, 1/2 herbs, sugar, salt and pepper until smooth; place in sauce pan.
- Coarsely chop remaining tomato; add chopped tomatoe and olive oil to saucepan.
- Simmer until thickened, about 45-60 minutes; toss remaining herbs.
Variations:
- Try this with pre-made, filled pasta, such as tortellini. Serve sauce on the side, and present it on a tray, with toothpicks.
- Add thyme to your herb mix for a French taste.
- Delicious sauce for zucchini pancakes or chicken breasts.
- Toss pasta with this sauce, pitted olives, and freshly grated parmesan – delicious!
Tips:
- If you don’t have a food processor, use a blender.
- This freezes beautifully.
