Acorn Squash Rings with Apple Stuffing

Makes: 8 servings
Ingredients:
1 tablespoon olive oil
2 medium Acorn Squash
1 yellow onion, finely chopped
2-3 gala apples, peeled, cored, and diced
2/3 cup apple juice
½ cup dried cranberries
2 tsp curry powder
Steps:
- Preheat oven to 350 degrees
- Saute onion in olive oil over medium heat until onion is tender.
- Stir in curry powder
- Add apple juice, apples, and cranberries and cook down until liquid is absorbed, about 15 minutes.
- Wash squash; cut in half and remove seeds; slice into eight 1-inch rings
note: if you have a difficult time cutting the squash raw, cut in half, remove seeds, place in
foil and bake at 350 degrees for about 10-15 minutes until slightly soft and then cut them
into rings.
- Grease cookie sheet with non stick spray or 1 tsp olive oil.
- Place squash rings on cookie sheet and scoop apple filling into each ring.
- Place foil over the top of the cookie sheet and bake until squash is tender, about 40 minutes.
If you baked the squash previously in order to cut it more easily, your cooking time will be
around 30 minutes.
- Remove with spatula and serve.
