Christmas Pilaf
Add some Christmas colors to your holiday meals with this healthy side dish.
6-7 servings (3/4 cup serving size)
1 tbsp olive oil
1 cup onion, chopped
2 garlic cloves, minced
1 tbsp fresh dill weed, chopped
1/2 tsp ground allspice
1 cup cracked wheat (can also use bulgar wheat)
1 1/4 cups low sodium vegetable broth
1/3 cup cranberries
1 cup green beans, cooked slightly (just tender)
1/4 cup toasted pine nuts
Heat oil in a pan over medium heat. Add onion, garlic, dill and allspice; cook, stirring frequently until onion is translucent. Add wheat; cook for 1 minute. Add broth; bring to a boil, then lower heat and simmer covered for 10 minutes or until most of the liquid is absorbed. Stir in cranberries and green beans; remove from heat. Cover and let sit for 5 minutes. Fluff with fork. Add pine nuts and fluff again.
