About Rachael
Welcome!
I’m happy that you have found some time during your busy schedule to think about you, food and physical activity and how they relate to your health. Let me start by saying, all foods fit! I’m a “Foodie” who enjoys a variety of foods from all of the food groups and from various cultures. I even have a sweet tooth! I look forward to helping you find the perfect balance between the food and activity choices you make on a daily basis.
I live in a beautiful part of California called the Central Coast. It’s paradise! I was raised in Morro Bay and currently live in San Luis Obispo. I completed my college education, both undergraduate (2002) and graduate (2004) work at Cal Poly, San Luis Obispo, focusing in the study of nutrition science. I became a Registered Dietitian in 2007 and currently teach nutrition classes at Cal Poly. My passion lies in community nutrition programs and providing nutrition information and counseling for my students, clients and at public speaking engagements.
I became interested in the area of nutrition as a young girl. My dad weighed over 300 pounds at the age of 28 and knew he had to make some changes if he wanted to see his children grow up. Through a healthy, sensible eating plan that my mom created, and through dedicating time to physical activity, he lost over 100 pounds in one year. This was my first exposure to seeing what both a healthy diet and exercise could do not only physically for weight loss, but also for a more positive outlook and enjoyment of everyday activities in life.
I look forward to meeting you and helping you achieve your nutrition related goals; whether they are to lose weight, learn more about food and/or physical activity or to have a better understanding of nutrition related topics in the media. My goal is to help you achieve success!
Fun Facts About Me
- I enjoy being outdoors and prefer a walk in my neighborhood or a hike over going to the gym.
- I’m a BIG movie fan! My favorite movie theater is The Palm Theatre in San Luis Obispo. I’m also a Netflix member.
- My favorite types of restaurants are Mexican and Thai food.
- I am a member of the local Sierra Club.
- One of my favorite things to do is bake! My specialties include Chocolate Mocha cake, Raspberry Streusel bars, M&M cookies and Sugar cookies.
- I love to read and am a member of the 3-D book club: Dine, Discuss and Digress.
- My favorite places to be are walking on the beach or skiing in the mountains.
