What is the most healthful vegetable?
Believe it or not broccoli wins with top honors! Studies show that broccoli helps prevent cancer, minimize risk of cataracts, and may even protect against stroke. One ounce of broccoli contains more vitamin C than an orange, 3 times the fiber of whole wheat bread, and is one of the richest sources of vitamin A. Broccoli is also high in potent cancer-fighting ingredients called isothiocyanates. These chemicals stimulate the body to produce our own cancer-fighting substances called “phase two enzymes” which can neutralize potential cancer-causing substances before they have a chance to damage healthy cells.
This is an especially important message for anyone who has family history of cancer since this leaves them at a greater cancer risk. Use chopped broccoli on a salad, try some cream of broccoli soup, or add it to a stir fry.
