Theresa Cornelius MS RD

 

About Theresa

I am a registered and licensed dietitian with 10 years experience in medical nutrition counseling. I am certified in Adult Weight Management through the Commission on Dietetic Registration. In addition to one-on-one counseling I have been very active in the celiac community as a support group leader. Additionally, I am an adjunct nutrition professor for Roane State and Big Bend Community Colleges, where I teach online nutrition courses for health care professionals as well as for non-health care majors. Through both my counseling and teaching I incorporate the most current medical nutrition information. For the last 4 years I have been in private practice specializing in assisting clients adapt  to a healthy lifestyle and to  accommodate celiac disease, other gluten intolerant disease as well as additional food allergies and/or intolerances.  

For my undergraduate studies I graduated from Northern Michigan University with a BS degree in Administrative and Clinical Dietetics. I completed my Masters degree in Nutritional Sciences at the University of Tennessee-Knoxville in 1997. I worked on a Ph.D in Human Ecology with a concentration in Nutrition until 2003 when I started my private practice.

I am a member of the American Dietetic Association, Tennessee Dietetic Association, Weight Management Dietetic Practice Group, Gluten Intolerance Group, Celiac Disease Foundation and Kappa Omicron Nu. I participate in several dietetic listservs that assist in keeping me current on all the latest research. 

This year, I started homeschooling my daughter, Katarina. We live in a suburb of Knoxville, TN, where we are active in several homeschool support groups. We regularly attend a bimonthly “gym” class held at a local church’s gym with other homeschoolers. In the summer, Katarina and I spend hours at the World’s Fair Park and at Vols Landing, feeding the ducks and fish, cooling off in the fountains, playing ball, and riding bikes.  

 

Fun Facts About Me

  • I love spending time with my daughter.
  • I enjoy teaching and helping individuals adapt to a healthy lifestyle.
  • I love to cook and have developed many low fat gluten free recipes.

 

  • My favorite sport to watch is figure skating
  • I love taking walks and feeding the ducks with my daughter
  • I attend church regularly, where I occasionally cook meals for the college student’s Sunday Supper.
