Roasted Pork Loin with Mixed Fruit Dressing
Makes: 6 servings
Ingredients:
Two 1-pound pork tenderloin
2 teaspoons chopped fresh rosemary, divided
2 tablespoons olive oil
½ yellow onion, chopped
3/4 cup diced apples
1 orange, peeled and sectioned
1/2 cup dried or fresh cranberries
1 1/2 cups low-sodium chicken broth
1/2 cup dry white wine
Steps:

Preheat oven to 375°F. Sprinkle pork with salt, pepper, and 1 ½ teaspoons rosemary

Heat oil in heavy large ovenproof skillet over medium-high heat. Add pork (cut to fit, if necessary) and sauté until brown, turning occasionally, about 10 minutes. Using tongs, transfer pork to plate.

Add onion to skillet and sauté until brown, about 5 minutes. Add apples, orange sections, and cranberries and stir until heated through, about 1 minute.

Add broth, wine, and remaining 1/2 teaspoon rosemary. Boil 1 minute. Return pork and any juices to skillet, turning to coat with sauce. If you don't have an oven proof skillet transfer pork and sauce to a baking dish.
- Place skillet in oven and roast pork until meat thermometer inserted into thickest part of pork registers 160°F, about 30 minutes (ovens vary so this may be longer). Transfer pork to platter; let stand 10 minutes. Slice pork and serve with sauce.
