Roasted Curry Squash
Quick and easy!
Ingredients:
1 butternut or acorn squash, peeled and cubed
1 tbsp olive oil
1/2 tsp curry
1/2 tsp ginger
1/4 tsp salt
Steps:
- Preheat oven to 375 °
- Mix ingredients in bowl until well coated
- Place in roasting pan or cookie sheet and cook for 15-20 minutes until cooked through, stirring occasionally
Variations:
- Use sweet potatoes in place of squash
