by Meri Raffetto RD, LDN
Pumpkins are not just for jack-o-lanterns to sit on your porch and greet people this Halloween. Pumpkins are actually a power food loaded in healthy nutrients. Don’t worry if you don’t want to go through the trouble of scraping the pulp out, canned pumpkin is one of those foods that actually becomes higher in nutrients when it is heated in the canning process.
Pumpkin is high in potassium and beta carotene helping to reduce your risk of developing certain types of cancer and reduces your risk of heart disease. It is also helpful to keep our skin young and help prevent damage from sunlight. At one point in time, pumpkin was used for a treatment for freckles…I guess if you don’t like your freckles you can give it a try and report back to us!
