Grilled Teriyaki Salmon                                                                        

Serves:                               4 servings

Preparation Time:                 20 minutes

Cooking Time:                      10 minutes

Marinate for the full 20 minutes.  It makes a big difference.

 

Ingredients:

1-3/4 lbs. boned salmon fillet, with skin

Marinade:

3 tablespoons soy sauce

1 tablespoon sake or dry sherry

1 tablespoon mirin

1 teaspoon fresh ginger juice

1-2 tablespoons olive oil

1 tablespoon sugar (or less)

Garnish:

green bell peppers, cut into strips, for garnish

Lemon slices, for garnish

 

Steps:

  • Whisk together marinade ingredients in a bowl; add the salmon; cover; refrigerate and marinate for 20 minutes.
  • Grill fish for approximately 10 minutes, brushing with marinade throughout cooking.
  • Slice diagonally and garnish with green peppers and lemon slices.
