Curry Pumpkin Soup
Makes: 6 1/2 cups
Ingredients:
1 tablespoon olive oil
1/2 cup chopped onion
2 tablespoon all purpose flour
1 1/2 tsp curry powder
1/2 tsp ground ginger
3 cups chicken broth
2 cups canned pumpkin
1 tablesppon honey
1/4 tsp ground nutmeg
1/4 tsp pepper
1 (12-ounce) can low fat evaporated milk
Steps:
- Saute onion in olive oil over medium high heat until tender.
- Stir in flour, curry powder, and ginger.
- Gradually add chicken broth and cook over medium heat stirring continuosly until mixture is thickened.
- Stir in pumpkin, honey, nutmeg, and pepper
- Reduce heat and simmer stirring occasionally for 10-15 minutes.
- Stir in milk and cook, stirring continuously, until heated through (don't scorch milk).
