About Christine
Healthy eating habits have kept me alive - and they can help you, too!
I am a registered dietitian with a bachelor's degree in dietetics and a master's in foods and nutrition, both from Marywood University in Scranton, Pennsylvania. This region of northeastern Pennsylvania has been my home for nearly 25 years, although I'm a native New Yorker.
I decided on a career in dietetics after being diagnosed with Type 1 diabetes at age 13 and spending ten days in the hospital learning about exchange list diets and injecting insulin. Today, I am on an insulin pump and rely on carbohydrate counting to stay healthy.
My career as a clinical dietitian has taken me throughout New York and Pennsylvania. I have fond memories of helping patients at an outpatient diabetes clinic in Brooklyn. I've also volunteered with the local chapter of the American Diabetes Association and am a member of the diabetes care and education practice group of the American Dietetic Association.
My expertise goes beyond diabetes, however, encompassing training to assist those battling obesity, trying to live heart-healthy lifestyles or simply hoping to focus on good nutrition. I'm a member of the Pennsylvania Nutrition Education Network, serve on the leadership team of Pennsylvania Advocates for Nutrition and Activity, and am membership chair of Pennsylvania Action for Healthy Kids. I am the immediate past president of the Pennsylvania PTA, which enabled me to advocate for school nutrition and anti-childhood obesity programs.
My husband and I raised two wonderful children: a graduate student in public service management at DePaul University and a fashion management major at Columbia College Chicago. Having taught both of them to cook after they moved into their first apartments, I'm beginning to compile the recipes and tips to write a cookbook geared toward college students.

Fun Facts About Me
- I gradually lost ten pounds thanks to the help of my son’s large black dog who has been walking with me daily since Hurricane Katrina destroyed their apartment near Tulane University.
- My favorite foods are salads, sushi, blackberries, shrimp cocktail, movie theater popcorn, and any vegetables from the local Farmer’s Market.
- I have a collection of over 100 cookbooks ranging from “1001 Low Fat Recipes” to “Cooking with the Two Fat Ladies.”
- I like visiting cities, beaches, and especially places like Oahu and Miami, which have both.
- I enjoy doing crossword puzzles, reading romance novels and mysteries, attending plays and ballets, gardening, and cooking.
