Burst Grape Tomatoes
Simple and beautiful presentation!
Yield: 2 servings
Prep Time: 2 minutes
Cooking Time: 10 minutes
Ingredients:
½ pint grape tomatoes or cluster of cherry tomatoes on the vine
1 TBSP Extra virgin olive oil for drizzling
Salt and pepper, to taste
1 small handful slivered basil
1 small handful snipped fresh parsley
Steps:
- Preheat oven to 400°.
- Place tomatoes in small ceramic dish.
- Drizzle with olive oil.
- Season with salt and pepper.
- Toss in herbs.
- Bake for 10 minutes.
Variations:
- Experiment with herbs, such as oregano and/or chives.
- Toss in balsamic vinegar for some extra punch
- These tomatoes taste delicious on a bed of baby greens, topped with additional balsamic and oil.
- Use a mix of yellow, orange, and red grape tomatoes for more color.
